Macaroni Salad

Macaroni Salad is the perfect side dish for a lot of different meals.  It's great in the summer with hamburgers or just about anything off the grill.  I actually found that it goes really well with chicken as well.  Not only that, but Macaroni Salad is also a tasty side dish when eating your favorite sandwich. You can actually prepare macaroni salad in about 20 minutes, just gather up the ingredients and you're on your way!

Ingredients

  • 16  ounces  elbow macaroni (about 2 cups)
  • 1 1/2  cup  Mayonnaise
  • 1  tablespoons apple cider vinegar
  • 2  tablespoon  Dijon Mustard
  • 2  teaspoon  sugar
  • 1  teaspoon  salt
  • 1/2  teaspoon  ground black pepper
  • 1  cup  thinly sliced celery
  • 1  cup  chopped red pepper (or green pepper)
  • 1/2  cup  chopped onion

Directions

  1. Cook the elbow macaroni according to directions on box, then drain and rinse with cold water until they are completely cool.
  2. Combine Mayonnaise, vinegar, Dijon Mustard, sugar, salt and pepper in a large bowl.
  3. Add in elbow macaroni, celery, red pepper and onion.
  4. Cover and place in the refrigerator to cool for 1 hour to let the flavors blend together.
  5. It's best served chilled, but you can also serve at room temperature.
